Fresh Pasta
At Convito Café and Market we make "Pasta Fresca" everyday and immediately refrigerate it to preserve the flavor and aroma of
the eggs and the semolina used in our recipe.
Homemade pasta cuts available:
- fettuccine
- fusilli
- lasagna sheets (special order only)
- linguine
- rigatoni
- spaghetti

Ravioli and Tortellini
We now offer frozen ravioli and tortellini from The Pasta Factory in our freezer case.

Cooking Instructions
Bring a large quantity of salted water to a boil. Drop pasta in boiling water. Stir regularly. Cooking time varies with the type of pasta. Cook until "al dente" (cooked through, but still firm to the bite). Drain in a colander. Shake dry. Transfer to a large plate or bowl and add sauce.
- fettuccine 5-7 minutes
- linguine 3-4 minutes
- ravioli/tortellini (frozen) 10-12 minutes
- rigatoni/fusilli 5-7 minutes
- spaghetti 2-3 minutes
Note: 1 lb. pasta should be sufficient for 3 people.

Cooking Instructions
Heat in a saucepan or the microwave. Pour over pasta. Toss until sauce is spread evenly over pasta.
Note: 1 container of sauce should be sufficient for 1lb. pasta.
